I need help with with ideas for a presents for my boyfriend?

His 21st birthday is in November then there is Christmas in December and our Anniversary is on New Years. He loves the outdoors and is in a fraternity. I am also not 21 yet so I can not just take him out to the bar. I have no clue what to get him and i want to get an early start.
